The Native Oyster & Shellfish Company Ltd is now alive, it is a beginning and the start of our journey, and so first things first, welcome.
For us, launching this company on St Andrew's Day (Patron Saint of Scotland) has to be a good omen!
We, the Native Oyster & Shellfish Company Ltd, are a unique aquaculture company that has placed the Native European Flat oyster (Ostrea edulis) at the heart of our business.
Our company is the result of our involvement in the ground breaking Glenmorangie DEEP project in Scotland. This project aims to restore a large Native oyster reef to the Dornoch Firth on the shore of which the Glenmorangie whisky distillery is located.
The Circular Economy
It has become clear to us that the growing of oysters is an activity that promotes and protects the environment in which it is carried out. Not only do the oysters clean the water and provide and restore habitat, there is now evidence that they also act as a carbon sink. Added to that shellfish aquaculture is also one of the few environmentally sustainable ways of producing protein for people to eat.
This has empowered us as a group as to the value of shellfish aquaculture in general, and to the need to save the Native oyster from extinction in particular. Yes we are a business but something has changed, our future is now tied into that of the Native oyster and its restoration.
Our involvement in the DEEP project has highlighted to all of us the importance of sustainability, trying to secure a future for the Native oyster and doing this by developing the concept of the circular economy.
A Sustainable Future
This change in perspective has also led us to start thinking about the other parts of our business and how we work. A key area of focus has been packaging, and we are very proud of the fact that we, with our partner Smurfit Kappa, have been able to develop a box delivery system that is made of 100% recyclable cardboard. As far as we are aware, this is a first for the seafood industry, and permits us to avoid using polystyrene.
A Treat
In time for Christmas and New Year we are making a limited release of 5000 Native oysters, grown the pristine waters of Wester Ross, Scotland.
We also have a selection of beautiful Rock oysters available as well.
